Healthy Breakfast - Overnight Oats


So, some of you may know that about 2 weeks back I decided to quit my job. Currently on the hunt for a new workplace, I have so much time on my hands to cook and bake again - something I have missed oh so dearly since the end of my Poly days.


I like to schedule all my potential interviews in the afternoon so I can sleep in and have a meal before heading out for the day. I used to schedule them from morning till late afternoons, and tend to wind up eating finger foods during the day or at times not at all. I've been watching so many cooking videos on YouTube and came across so many overnight oats recipes that I had to try them out on my own!

I have to say, they are so yummy, and hearty, you guys really have to try them out! I enjoy them as a post workout snack as it's so full of fibre and protein. They are healthier, and definitely works better than isotonic drinks for muscle recovery. Think after an hour of BodyAttack... A bottle of H20 wouldn't get me back on my feet that quickly!


What you need:-

BASE INGREDIENTS
½ cup Rolled Oats
¼cup Greek Yogurt (Regular yogurt works just as well)
¼ cup Almond Milk (Substitute with Soy, Coconut or any non-dairy milk you prefer)
1 tbsp Chia Seeds
Mason Jar(s)



FLAVOUR INGREDIENTS
Blueberry Maple
1 tbsp Maple syrup (or agave/honey)
¼ tsp vanilla extract
¼ cup blueberry
¼ tsp cinnamon powder

Chocolate Strawberry
1 tbsp honey
1 tsp cocoa powder
1 tbsp chocolate, shavings
¼ cup strawberries, hulled and sliced

Banana Nut
1 tbsp honey
1 tbsp natural nut butter
2 tbsp walnuts, chopped (optional)
½ banana, sliced

Pomegranate
2 tbsp pomegranate arils
1 tbsp shredded coconut
½ tsp vanilla extract
½ tsp honey

Peaches and Cream

¼ cup peaches, chopped
¼ tsp cinnamon
½ tsp maple syrup
1 tbsp cream


DIRECTIONS
1) Combine all BASE ingredients in jar and cover with lid.
2) Add in your preferred FLAVOUR ingredients and shake to mix.
3) Refrigerate mixture for at least 4 hours, ideally overnight.
Enjoy it in the morning cold or pop it in the Microwave for about 30 seconds to 1 Minute to eat it warm.

My personal favourite is just having it with some bananas and strawberries with a dash of cinnamon and honey drizzled over the top just before serving!
